Grilled stuffed peppers


Yesterday, I grilled up some stuffed peppers as part of a kick-ass 4th of July meal. The recipe for these stuffed peppers came from my Weber grill instructions and is awesome. You put in one cup of croutons (homemade or otherwise), one cup of cubed fresh mozzarella, a heaping spoonful minced garlic and Italian seasoning into a bowl. Mix it up, cut the tops of bell peppers and clean out the innards. Put in the cheese-crouton mixture and attach the tops with toothpicks. Grill on indirect medium for 12-15min if you have a Weber grill. Use your best judgment otherwise. You want to grill until the peppers are just about to fall apart.

Holy moly. They turned out great. Before grilling is top and after is bottom.

This marks my 45th new recipe.
